The default zone for initially detected applications is DisableAll.
Can be set to LocalOnly typically. Should not be too enabling anyway.

The default zone for AllApplications is AllApps.
Anyway it should be an empty (ruleless) zone till you do understand how it works practically.

OK - I have the first setting in my zone list. I do not have a zone called AllApps for the second setting. If I make a new zone with no rules it looks just like EnableAll. Is that what I want? Thanks.

Any empty (rule less) zone would be suitable for typical environment.
You can create new one or use EnableAll.
We just do not recommend using an existing zone (EnableAll, for instance) as the name of accidentally used zone may confuse you in the future.
